Farro, Green Olive and Feta Salad

This recipe is so easy to make and delicious. Farro is a hearty nutty flavored whole grain that is fairly new to many of us, but Italians have been eating it for more than 2,000 years. Farro contains cholesterol-lowering fiber, is full of minerals and also makes a delicious breakfast. Just add milk to cooked farro and top with honey, nuts and berries for a nutritious and filling meal to start the day.

-All ingredients used are organic-

(Serves 4 as a side)

1-cup farro wheat
2 tbsp. extra-virgin olive oil
3 tbsp. Meyer lemon juice
2 tbsp. finely chopped Meyer lemon zest (from about 4 small lemons)
1/2 tsp. pepper
1/2 cup flat-leaf parsley leaves
1/2 cup crumbled sheep’s-milk feta cheese
2/3 mild green olives such as Lucques, cut away from pit.

  1. Bring 4 cups of salted water to boil and stir in the farro. Reduce heat to a simmer and cook until just tender, about 20 minutes.
  2. Drain and set aside to cool.
  3. Whisk olive oil, lemon juice and zest, pepper, and parsley together in a medium bowl.
  4. Stir in feta, olives and farro.

This dish is good for a day or two. Enjoy!
