This is one of those naturally creamy treats that is actually good for you! Kids love it too, which is great because it’s full of chia seeds which are a superfood packed with omega fatty acids, protein, fiber and since they are soaked they are easier to digest.
Ingredients
- 1/2 cup whole chia seeds
- 2 cups (1 15-ounce can) coconut milk
- 2 tablespoons honey
- optional toppings: strawberries with kiwi, raspberries, shredded unsweetened coconut flakes, slivered almonds or chopped pistachios or pomegranate seeds
Preparation
1. Place all of the ingredients in a bowl and whisk to combine or add to a blender and blend for 30 seconds.
2. Divide between 4 jars.
3. Refrigerate overnight.
