Coconut Chia Seed Pudding

This is one of those naturally creamy treats that is actually good for you! Kids love it too, which is great because it’s full of chia seeds which are a superfood packed with omega fatty acids, protein, fiber and since they are soaked they are easier to digest.


  • 1/2 cup whole chia seeds
  • 2 cups (1 15-ounce can) coconut milk
  • 2 tablespoons honey
  • optional toppings: strawberries with kiwi, raspberries, shredded unsweetened coconut flakes, slivered almonds or chopped pistachios or pomegranate seeds


1. Place all of the ingredients in a bowl and whisk to combine or add to a blender and blend for 30 seconds.
2. Divide between 4 jars.
3. Refrigerate overnight.
